Some days you just want to have a Deliciously Meaty Macaroni Beef Casserole for dinner. Ground beef casseroles are perfect for a cold winter day or anytime you have a taste for some good old comfort food. This casserole is a delicious combination of meat, tomatoes, onions and cheese. So simple, but so delicious and filling, this ground beef casserole is a great crowd-pleaser. This delicious mac and cheese-style recipe is pretty cheap and makes a ton of servings, so you'll have leftovers for days to come!

Ingredients

  • 1 1/2 cup macaroni
  • 2 pounds lean beef, minced
  • 1 medium onion, chopped
  • 1 clove garlic, crushed or 1/8 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • dash Tabasco
  • 1 can (28-ounce) tomatoes
  • 1 can (10-ounce) tomato soup
  • 1 cup cheddar cheese, finely cubed
  • couple sprigs thyme, optional

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cook macoroni according to package directions. Drain.
     
  3. While you're cooking the macaroni, brown the ground beef, onion and garlic, then drain the excess liquid. 
     
  4. Add salt, Worcestershire sauce, Tobasco, tomatoes, tomato soup, and thyme (optional). 
     
  5. Combine with cooked macaroni and pour into 3-quart casserole. Sprinkle cheese over top of casserole.
     
  6. Cover and bake for 30 minutes.
     
  7. Uncover and continue baking for an additional 20 to 25 minutes.

I cut the recipe in half. It is very good. My husband and I can't have spicy so I left out the tabasco. I will make this again for sure.

I've had more than my share of macaroni and beef casseroles over the year. It was always one of the go-to quick meals when I was growing up. This is a nice version of what I consumed many, many pounds of since my youth. I normally add some diced peppers to the mix, along with using shredded cheese rather than bothering with cubing the cheese. I also like using a cheddar and mozzarella mix to the casserole. As someone stated below, you can never have too much cheese.

Macaroni cheese is one of the greatest pleasures of this life so I am always interested in any variations available. We did not have any Worcestershire Sauce so I left it out and I added some sour cream to the sauce because we did not have any tomato soup either. It was a very good, filling meal and definitely worth having again.

This looks like a hearty meal to feed a hungry family. It would probably freeze really well, too.

Makes a ton so you have leftovers? It serves 6. That doesn't sound like a ton. If you have any big eaters, this would not go that far. My husband would eat half of it by himself. Taste wise it is pretty good. I would add more cheese. But, I always want to add more cheese.

I love adding Worcestershire to my hamburger. It adds so much depth and flavor to the meat. The first time I had the combination it was on burgers. Oh my, they were so delicious and moist. I loved it from the first bite. Thanks for posting another recipe another yummy recipe for me to try with this combo.

Looks nice & basic and, for empty-nesters, shouldn't be too hard to cut in half.
