"This Honey BBQ Brisket makes for a great dinner. Serve with southern cornbread and grilled veggies like mushrooms and zucchini. The cooking time for your brisket varies based on the weight and grill temperature. Since this takes a while, start around lunch time to be ready for dinner. That being said, it is best that you use a gas grill for this recipe, as you will want more control over the temperature than a charcoal grill provides. A quick Amazon search reveals countless books and resources for grilling beef. I happen to enjoy making a variety of sauces to marinate meats prior to grilling. Ingredients

  • 1 beef brisket 4 to 5 pounds, trimmed of fat
  • 2 c Honey BBQ Sauce Make the full recipe and use the whole recipe (about 2 cups)
  1. Rinse the brisket and then pat dry with paper towels.

  2. Place the brisket into a large baking dish and cover with the Honey BBQ sauce. Cover dish and place in refrigerator for three to four hours.

  3. Remove brisket from refrigerator and allow to stand at room temperature for one hour. While you are waiting, prepare your grill by placing a drip pan under one side of the cooking surface. Heat the burners on the opposite side to 250 degrees.

  4. Place the brisket on the grill, above the drip pan. Baste with any remaining BBQ sauce.

  5. Allow the meat to cook for around five hours (or until it reaches an internal temperature of 195 degrees), flipping at the three hour mark.

  6. When the brisket is finished on the grill, carefully remove it from the heat and wrap in aluminum foil. Let rest for 20 minutes.

  7. Slice brisket thinly against the grain and serve.
