"Simplicity at its best! This is what these beef and carrot meatballs are all about! The best food comes with simple ingredients, crafted to perfection to create comfort food to be enjoyed with family and friends. I love meatballs and love to create little variations every time I make them. These meatballs are simple and easy to make. I have used ground beef but you can make them with pork, turkey or even chicken. The carrots add sweetness and texture to these meatballs. And by now, you know that Panko bread crumbs are my number one choice when making meatballs."

Ingredients

  • 2 pounds ground beef
  • 1 carrot (grated)
  • 1 cup Panko breadcrumbs
  • 1 cup onion (finely chopped)
  • 2 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 1 tablespoon freshly chopped parsley
  • 1 teaspoon dry oregano
  • 1 egg
  • 2 tablespoons olive oil
  1. In a large bowl, mix all of the ingredients for the meatball

  2. Using a 1/4 cup measure, form the meatballs and place them on a cookie sheet lined with parchment paper.

  3. Bake in a preheated oven at 375F for 10 minutes.

  4. Turn the meatballs on the other side and return them to the oven for another 10 minutes.

  5. While the meatballs are in the oven, prepare the sauce.

  6. In a large skillet heat up the olive oil.

These sound amazing! Holy cow. I need to make these tonight.

Yummm these meatballs look good. I like the addition of grated carrot. I think it would go especially well with chicken meatballs. I often make meatballs but this recipe has slight variations which I would like to try such as using tomato paste. I think that is a fantastic idea.

These look really yummy! I love adding veggies to meatball recipes.
