Ingredients

  • 1/4 cup orange juice
  • 3 tablespoons honey
  • 2 teaspoons vanilla
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 2 teaspoons chopped candied ginger
  • 1 tablespoon chopped fresh mint
  • 16 cups fresh fruit: cut up pineapple, apples, pears, banana, red grapes, strawberries, blackberries, blueberries, kiwi, mango, and pomegranate seeds.

Instructions

  1. In a small bowl whisk together the orange juice, honey, vanilla, lime juice and lime zest.
     

  2. Wash and cut the fruit and place in a large glass bowl.
     

  3. Pour the dressing over the fruit and toss well.
     

  4. Add the chopped candied ginger and chopped mint and toss.
     

Note:

Add other fruits or substitute with fruits of your choice such as cantaloupe, peaches, watermelon, oranges, cherries, papaya, passion fruit, grapefruit.

So simple but SO delicious. And pretty affordable, too. That mint is a nice touch!

This may sound a little unusual but I think this fruit salad would be amazing if it were tossed into some cottage or ricotta cheese. I'm not sure how I feel about the candied ginger since it's probably loaded with sugar, but I'd definitely have to use ground ginger to replace it and would also squeeze my own orange juice to get so much more of a healthier result.

I love practically any type of fruit, so this quick and easy salad looks delicious. Perfect for a summer picnic or backyard BBQ!

This quick and easy fruit salad recipe is the best! I make this everyday for my snacks and it really tastes great when cold. I sometimes add cheese or mango on it to make it a bit much sweeter. And try a low-fat/ non-fat whip because fruits are sweet already.

It is hot here in South Africa at Christmas time and there's lots of fruit around and in season. We also east a lot at this time of the year and I went looking for something light. This recipe looks very interesting and I think I'm going to make it. I have all of the ingredients already in my store cupboard which helps! I never thought of mixing cool whip (here we call it Orley Whip) with pudding powder. I can't wait to try this and see what it tastes like.

I have made this for years. It is requested at every occasion. I subsitute Jello powder for the pudding powder for variety. I use yellow with mandarin oranges and pineapple. And one of the reds for the fruit cocktail. When I want to dress it up a little, I add 1 small container of sour cream and 1 small container of cottage to the mix. Thank you for your recipe. It brought many memories back.

This is BEST made with Fresh pineapple, mandarin oranges, halved green grapes, fresh or canned cherries and bananas added just before serving. As stated, Everyone loves it!
