Does the rhubarb have a stringy texture in these bars? My grandma loved to make pies with these ingredients, but I could not hack the rhubarb because it was so stringy like celery I guess is the only way I can describe it. She had a big bush of it in the back yard, but I could not get past the texture to taste it.

If you have never used Rhubarb before, this is a great recipe to try! Typically, the stalks are cut into small pieces and then used in cooking/baking. I'm assuming only the stalks are used in this recipe? I would recommend cooking the crust for 5-7 minutes at 350 degrees and then adding the filling and additional topping to bake for an additional 30 minutes. This will keep the crust crispy and not let it get soggy from the fruit.
