"These almond delights were sweet with a firm but tender crumb. They seriously surprised me how GREAT they are. My dear friend Dorene made these and brought them over for band practice and I knew I had to get the recipe and share with you all! Grease and flour 9 inch cake pan. Preheat oven to 350. Toast almonds on a cookie sheet for 3 - 5 minutes while mixing batter. Blend melted butter and sugar, and beat in the eggs. Add extracts. Add salt and flour and mix well. Spread into pan. Sprinkle with almonds and 1 tablespoon sugar. Bake 30-35 minutes until golden and toothpick comes out clean. Easy as that!"

I don't know if these Almond Delights Cookie bars are a cake, a cookie , or a bar, and you know what...I don't care they are absolutely Yummy. They are soft and chewy, and crunchy, and full of rich almond flavor. Do yourself a favor and make two batches of these. They go fast. You will nor find a better almond cookie, that is easier to make than these.

I love almonds and almond flavoring. My family likes the flavor too. This looks like a very easy and delicious cookie. I see what appears to be a delicious crispy top too. The guys in my family likes anything that isn't chocolate so this would be a good recipe for me to try for them. I wonder if anyone has made these and mailed them? Would they hold up well and arrive tasting the same as fresh?

The almond cookies available at a lot of Chinese restaurants have always been a favorite of mine, and these are really reminiscent of those cookies, only a bit chewier. These are great to have with some coffee or tea, and I can see these getting made frequently for sharing at meetings. I like the sugar garnish since it gives a nice light crunch to the top of the bars.
