Notes

My friend gave me a massive zucchini that he grew, himself. Never having cooked with one I just did whatever came to mind and sounded good. This dish can be cooked with whatever seasonings or other vegetables you like. It's really customizable. I even used leftover grilled chicken thighs in one batch...really good.

Ingredients

  • 1 Chicken Breast
  • 1 cup Zucchini
  • 1 Potato
  • 1/2 jar Paul Newman's Alfredo Sauce
  • 1 teaspoon Garlic Seasoning
  • 1/2 teaspoon Onion Powder
  • Salt
  • Pepper, to taste
  • Optional: Parmesan cheese to top it off

Instructions

  1. Preheat pan on medium heat and cut up chicken breast.

  2. Add chicken to preheated and lightly-oiled pan along with seasonings. Cut up the zucchini and potato, in the meantime. Cook chicken till no longer pink and then add just the potato. Season more, if you like. Cover the pan and let the potato cook till browned, semi-crispy and no longer hard.

  3. When both the chicken and potatoes are cooked through, 15 or 20 minutes later, add the zucchini. Cover the pan, again, and wait about 5 minutes for the zucchini to heat up.

  4. Next, add the alfredo sauce, more or less, depending on your own personal preference. Cover the pan, again, and wait another 5 minutes, or till all is hot.

  5. Serve with a sprinkle of parmesan cheese on top. It's good with or without.

Baked? I see no directions that indicate this Chicken Bake dish is ever baked. I'm confused...

I am confused too! It does say baked and it's pan steam with a little oil as far as I can tell. It does sound good though.
