Peach Mango Salsa
"This sweet and spicy peach mango salsa is one of my favorite toppings for grilled fish. It's made with juicy ripe peaches, fresh mango, a little red onion, and a squeeze of lime. Spoon it over grilled snapper, mahi mahi, or swordfish, and you’ve got a restaurant-quality meal in minutes. It also works great as a dip with tortilla chips or piled on top of grilled chicken or shrimp tacos. What I love most about this salsa is how fresh it tastes. There’s no cooking involved—just dice everything up and let it sit for a few minutes so the flavors can come together. Make it right before dinner, or prep it a few hours ahead and let it chill in the fridge. "

Ingredients
- 1 Peach
- 1 Mango
- 1 large tomato
- 1 cup diced pell pepper
- 3 tablespoon diced red onion
- 1/4 cup chopped cilantro
- 1 garlic clove, mined
- 1 small jalapeno pepper
- juice of 2 limes
- salt & pepper

In a medium bowl, combine the mango, peach, tomato, jalapeño, red onion, cilantro, and garlic.

Squeeze the juice of one lime over the mixture and gently toss to combine.

Add more lime juice as needed. Season with salt and pepper to taste.

Let the salsa sit for 15 to 30 minutes so the flavors can blend.

Serve over grilled fish, shrimp, or chicken. It’s also great with chips or in fish tacos.
