Using fresh tomatoes, this classic southern tomato pie is full of flavor and perfect for brunch or as a dinner side dish. I may be a Yankee, but I am a huge fan of Southern cuisine. The problem is it tends not to be gluten-free friendly. Not to mention, a pie takes quite a long time. Whether I'm making a quiche or a sweet pie, I'm always looking to speed things up.
