"This Spanish rice from Granada, known as arroz empedrado Granadino, is what Spanish regional comfort food is all about. It’s packed with flavors, super easy to make, and done in a little over 40 minutes. Serve it next to a garden salad, crunchy baguette, and of course a bottle of Spanish wine for a fabulous meal. To make this recipe, I used boneless chicken thighs. You can also use boneless chicken breasts or a combination of both. For the liquid, I used chicken broth. Which is what’s traditionally used. You can also use vegetable broth, beef broth, or even water if you like. Just make sure to season accordingly if using water."
