Lemon Ricotta Cookies
"My lemon ricotta cookies are soft, cakey, and topped with a sweet lemon glaze. Best of all they're ready in about 30 minutes without any chilling! The ricotta makes them super moist and almost cake like. Use full fat ricotta for the best results. I like to top mine with a lemon glaze. You could also use frosting or even just whipped cream. These go perfectly with a warm cup of coffee or a glass of milk."
