"These Crispy Spanish Pea Fritters, known as Buñuelos de Guisantes, have a light, crispy texture with a delicious interior, they’re easy to make and done in a little over 30 minutes. Serve them as a tapas appetizer or even as a side dish. Next to some roasted potatoes and pan-grilled fish. To make this recipe, I used a bag of frozen peas. When boiling the peas, boil them for 2 to 3 minutes or until just tender. If you overboil them, they will get a mushy texture and lose their beautiful, vibrant green color."
