Poor Man Chicken Broccoli Casserole

Ingredients

  • 2 pounds broccoli (or one large package), thawed and drained
  • 4 chicken breasts, cooked and boned
  • 1 pound Velveeta cheese
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1 package of stuffing mix
  • 3 tablespoons melted butter

Instructions

1. Preheat oven to 450 degrees F. Bake chicken for 20-30 minutes, turning over halfway through. If desired, coat chicken in olive oil and season with salt and pepper before baking.  

2. Place the broccoli in a well greased baking dish. Cut chicken into bite size pieces and spread over the broccoli.

3. In a bowl, mix together soup and mayonnaise. If you think the mixture seems too thick, add a little milk. Pour over the chicken.

4. Top with thin slices of the Velveeta. Sprinkle the stuffing mix over the cheese and drizzle the melted butter over the stuffing. Cover and bake for 30 minutes, then uncover and bake for an additional 30 minutes.

A great meal for our large family! I do not like using tinned soup as a sauce so used some sour cream and some chicken stock instead and it tasted really good. We added a crushed fresh garlic clove as well as a pinch of cayenne pepper. It was flavorful and, on a bed or quinoa, pleasantly filling.

Looks like a great recipe to save both time and money! I will make this for my kids!

this doesnt seem very frugal to me...and I cook for 1...sigh back to the drawing board

poor man would have no meat.. more like a potato or pasta and bread crumbs not stuffing mix.. lol

This is pure comfort food! First - I only used a pound of velveeta. Second - I used two boxes of stuffing mix, made according to the directions on the box. I covered it with tin foil for the first 40 minutes to keep the stuffing from getting to crunchy. It was super good!

As written, this is NOT a poor man's dish! These are not cheap ingredients. The stuffing is meant to stay crunchy, like croutons. I would use less than a lb. of Velveeta. If you slice it thin, about 1/8", you would only need about a 2" chunk of cheese to cover the casserole.

The stuffing remained crunchy. I scraped it off, put it in a casserole with some water and microwaved it. Then I put it back over the chicken and broccoli. The flavor is great. I also added 1/4 tsp of curry powder to the soup mixture. Next time I will prepare the stuffing mix according to the directions on the package and then put it on.

I certainly do not see how this is considered to be a budget dish. Chicken breasts would be a minimum of $3.00. Broccoli is $1.99 or more, soup is a dollar per can, stuffing mix is $1.59-$1.89. 2 lb. of Velveeta is $5.49. Add in mayo and butter and sure is not my idea of an economy dish.

I agree. As soon as I saw the ingredient list my first thought was KaChing! Second thought was "cardiac arrest food". Having said that, with some modifications, it could become frugal.

Nanaerm: Try using the meat from the chicken thighs & legs. (They're much less expensive, & very tasty). If you're on a budget, you can also use a 'generic' soup & stuffing mix, which would make this dish a bit less expensive for you. Personally, I wouldn't use "Velveeta" cheese (I dislike it), but I'd definately use a much tastier cheese.....perhaps a cheese which was on sale in my deli dept. at the supermarket . Since you (more than likely) already have mayo & butter in your fridge, these ingredients should not increase the cost of this recipe for you. If you STILL find this recipe much too expensive to prepare, I wonder what you actually serve to your family for meals....a lot of fats & carbs, I assume! Yeah, that sounds pretty 'southern' to me!

2# of velveeta is a LOT of cheese....can this be right?
