Ingredients

  • 1 tablespoon vegetable oil
  • 1 1/4 pound skinless, boneless chicken breast halves
  • 1 can Campbell's Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1 1/2 cup water
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1 cup regular long-grain white rice
  • 2 cups frozen mixed vegetables
  • 1/2 cup Cheddar cheese, shredded

Instructions

  1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.

  2. Stir the soup, water, onion powder, black pepper and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes, stirring once halfway through the cooking time.

  3. Stir in the vegetables. Return the chicken to the skillet. Sprinkle with the cheese. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.

I decided to follow SissieSass (below) and bake this in the oven rather than make it in a skillet. It worked perfectly and was very good to eat. We added a couple of chopped fresh garlic cloves and used chicken stock instead of the soup (I do not like soup as a sauce, it always tastes like soup!). It was a really good family meal and simple enough to prepare to make it suitable for a week night after a busy work day.

I make a dish similar to this, but I cook all of it in the oven. I cut the chicken into pieces and bake for 35 minutes on 350. Once cooked I add three cans Rotel and 6 cups rice already cooked. I finish it with a block of Velveeta in the oven for another 15 minutes. I think that your recipe sounds so yummy and it might be a lot crispier than mine. I want to make both and see the difference.
