Roasted Garlic and Parmesan Mashed Potatoes

Roasted garlic is a classic taste that's even more delicious when paired with Parmesan. Serve these mashed potatoes for a unique change of pace this Thanksgiving.

Serves: 6

Ingredients
  • 1 head garlic, cloves separated and peeled
  • 2 pounds red potatoes, peeled and quartered
  • 1/2 cup milk or light cream
  • 2 ounces butter or margarine (butter tastes better)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup Parmesan cheese
Instructions

1. Heat oven to 350 degrees F, coat garlic with a tablespoon of olive oil, place on cookie sheet. Roast for 20 to 30 minutes till well browned and soft.

2. Boil potatoes until tender, about 15 minutes, drain well and place in a mixer bowl, add remaining ingredients and mix till mashed and combined. Adjust seasonings to taste. Notes: Leave the peels on the potatoes if you like. If you are a garlic fiend (or afraid of vampires), use 2 heads.
