Low-Fat Eggplant Parmesan

This eggplant parmesan recipe is different from most in that it has practically no fat in it at all! There is no frying involved - this is a baked eggplant recipe, and you can even microwave it if you like. How easy is that?

Ingredients
  • 1 eggplant, about 1 pound, sliced 1/2-inch thick
  • 1 15-ounce can tomato sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon basil
  • 1/2 cup shredded skim-milk mozarella cheese
Instructions
  1. Preheat oven to 325F degrees.
     
  2. Lay eggplant slices in single layer in flat baking dish lightly sprayed with no-stick cooking spray.
     
  3. Combine tomato sauce, garlic, basil, and pour over the eggplant.
     
  4. Bake for about 1/2 hour, or until tender.
     
  5. Sprinkle with cheese.
     
  6. Return to oven just until cheese is melted.
Notes
  • Alternatively, you can microwave this dish:

    • Prepare the egglplant the same way as for oven-baking.

    • Cover tightly and microwave 8-10 minutes, or until tender.

    • Sprinkle with cheese and let stand 5 minutes.   If cheese is not melted, microwave 1 minute.
