Cheesy Mashed Potato Casserole

Cheese lovers of the world, unite! Potatoes are baked under a layer of gooey cheese in this delicious casserole.

Serves: 6

Cooking Time: 30 min

Ingredients
  • 4 potatoes, medium size
  • 2 cups freshly grated Parmigiano Reggiano
  • 2 eggs
  • 1 cup milk
  • salt and pepper, to taste
  • 6 tablespoons butter
Instructions
  1. Preheat oven to 400F degrees.
     
  2. Boil the potatoes until tender.
     
  3. Drain, peel while still hot, and mash in a large bowl.
     
  4. Add the cheese, eggs, milk, salt and pepper, mixing thoroughly.
     
  5. Transfer to a baking dish smeared with butter and bake in an oven preheated to 400F degeres for about 30 minutes.
