    Ingredients

    • 6 cups water
    • 1 medium onion, chopped
    • 2 small potatoes, peeled and diced
    • 1 large carrot, diced
    • 4 ounces fresh mushrooms, sliced
    • 4 ounces udon noodles
    • 4 ounces cubed firm tofu
    • dash of soy sauce
    • 4 chicken bouillon cubes
    • 4 tablespoons miso

    Instructions

    1. In a medium saucepan, bring water to a boil. Add onion, potatoes, carrot, mushrooms, tofu, udon, soy sauce, and bouillon to boiling water.
       
    2. Reduce to a simmer and simmer for 8-10 minutes or until veggies are tender. Stir in miso and serve.
