The presentation of this dish alone looks delicious. I could eat potatoes every day and I mean that. No matter how they are prepared, I just love them. This recipe calls for a few simple ingredients and here is an opportunity to prepare them in a different way.

There are like a zillion ways to prepare potatoes and a lot of the recipe includes cheese. I can say that I have never used corn flakes for any crunchy topping idea but this potatoes recipe sounds delicious. I think I will prepare this for next Sunday when I prepare some sides that can be served as leftovers during the week.

This sounds really yummy. I was familiar with the use of cornflakes as a crunchy topping before and I agree it's a nice addition to this recipe. I think I'd definitely halve the recipe, and I'd also be a bit more adventurous with the cheese. I think adding in some cubed hot pepper jack cheese would give it a nice extra kick.

Very nice and quick to make too so I really like this recipe! I am not at all crazy about pimentos so added chopped spring onions instead and I also used fresh parsley from the garden because did not have any dried flakes. Oh and we added a crushed garlic clove (just because we could, lol!). It is a perfect side dish, we really enjoyed it and the recipe has joined my bookmarked list of dishes that definitely should be repeated.

My favourite ingredient in this recipe is the crushed cornflakes. It's something I haven't come across before or even had the idea to use myself. I think it's a good alternative to breadcrumbs which is popular in similar recipes. Plus, the slightly sweet corn flavor should go well with the cheesy potatoes.
