  • 2 pounds small potatoes, such as red, blue or gold, cut into 1-inch chunks (about 6 cups)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 4 links fully-cooked chicken sausage, sliced (12 ounces)
  • 2 golden delicious apples, peeled, cored and cut into 1.5-inch chunks
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons maple syrup
  • 1 tablespoon cider vinegar or red wine vinegar
  • 2 cloves garlic, minced
  • 1/2 onion, diced

Instructions

  1. Preheat oven to 450 degrees F.

  2. Toss potatoes, oil, salt, and pepper in a large bowl until coated. Spread out in the Swiss Diamond Nonstick Large Roasting Pan. Roast for 10 minutes.

  3. While potatoes roast, stir sausage, apples, mustard, maple syrup, vinegar, garlic, and diced onion together in the bowl.

  4. Reduce oven temperature to 375 degrees F. Remove roasting pan from the oven. Scrape potatoes up from the pan with a spatula. Add sausage and apple mixture to the potatoes and toss to combine.

  5. Return to the oven and bake, stirring once or twice until the potatoes and apples are tender and the glaze is caramelized, 45 to 50 minutes.

What an interesting recipe this is...I really thought it was going to be more like a potato salad which sounds pretty good with these ingredients in my book. Roasted potatoes make anything taste amazing, but I'm a little iffy about the roasted apples although I'm sure the addition of the sausage makes it work. Do the apples get mushy?

I absolutely loved the flavor of these potatoes! The sweetness of the maple and apples blends so well with the savory goodness of the chicken sausage and potatoes, and offsets some of the natural zing of the mustard seed and vinegar. A very natural combination, and I can't wait to make it again!

I would have made these potatoes without the sausage, but they were good nonetheless.

The flavor of these potatoes is amazing. You wouldn't think that all of these ingredients go together, but they really work. I think bacon would also taste great in place of the sausage.
