I love cooking pork. Holidays or no holidays! Pork is also still a relatively cheaper meat to buy and eat as opposed to beef or lamb so I tend to cook it quite a bit. I like to find various ways to cook it as it can be a boring and tasteless meal if you dont dress it up with something. So this recipe is definitely a keeper. I think apples compliment pork beautifully and this roast looks absolutely scrumdiddlyumptious!
