When I was a kid, I remember that going to Red Lobster was a massive deal. You thought you were someone super important and fancy when you heard you were going to Red Lobster. The one thing you don’t forget is the biscuits. Those cheddar biscuits were and are what dreams are made of. I will go on record and say that when I was pregnant with my daughter, one of my biggest cravings were those biscuits. I will neither confirm nor deny that I ate six in one sitting. Now if you’ve ever had those biscuits, imagine filling them with seasoned crab. Yes, this is happiness.

Makes4 - 6 servings

Ingredients

  • 8 ounces (226 g) shredded Mexican cheese blend
  • 2 (16-oz [454-g]) tubes of Grands! Southern Homestyle Original Biscuits
  • 16 ounces (454 g) lump crab meat
  • 3 tablespoons (23 g) Old Bay seasoning
  • 1/2 cup (114 g) butter
  • 1 tablespoon (8 g) garlic powder
  • 1/2 teaspoon parsley flake

Instructions:

  1. Preheat the oven to 350°F (176°C).

  2. Prepare a 12-count muffin tin with cupcake liners. Sprinkle about a tablespoon (7 g) of the shredded Mexican cheese blend into each liner.

  3. Open the cans of biscuits and split each biscuit horizontally down the middle. Press one half into the cheese-lined tins, making sure to keep some dough hanging over the tin for crimping later. Set aside the tops of each biscuit.

  4. In a bowl, mix together the crab and Old Bay seasoning, and fill each muffin cavity with about 2 tablespoons of the crab mix. Place a thin slice of butter on top of the crab mix in each cavity. Cover each biscuit with its top half. Crimp the sides of the biscuits, making sure to seal all the crab mixture into each biscuit. Make a small hole with your knife in the top of each of the biscuits.

  5. In a bowl, melt the butter and add the garlic powder and parsley flakes. Brush the top of each biscuit with this garlic butter and bake in the oven for 13 to 15 minutes or until golden brown. Sprinkle the tops with the rest of the shredded cheese and bake again for 2 to 3 minutes or until the cheese is melted.

  6. Remove from the oven and enjoy having your dreams come true.
