"Vegan blondies made with white beans and done funfetti style?! This might be the most clever and FUN way to use beans. Move over black bean brownies, there’s a new dessert in town! Not only are these vegan blondies totally adorable and delicious, they are also protein dense due to the addition of white beans. As a person who isn’t crazy about desserts (I know, I know), I find myself more attracted to less sweet treats like banana bread, muffins and energy balls. The extra great thing about funfetti vegan blondies is that on their own they’re not overly sweet."

Notes* If you are not avoiding wheat, regular flour works in this recipe. ** I have not yet made this recipe with traditional sugar, but thinking traditional white sugar would work fine.

Ingredients

  • 2 tablespoons ground flax
  • 6 tablespoons water
  • 1 1/2 cup cooked white beans
  • 1 cup melted butter - I used Earth Balance
  • 3 cups coconut sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup 1 to 1 Gluten Free Flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon sea salt
  • 2 tablespoons sprinkles. I used Wilton vegan friendly
  • 1 cup icing sugar - I used Wholesome brand (for classic vanila icing)
  • 2 tablespoons non-dairy milk - I used vanilla soy milk (for classic vanila icing)
  • 1 teaspoon vanilla extract (for classic vanila icing)
  • 1 pinch salt
  1. Preheat oven to 350°F and lightly grease a 9X9 baking dish.

  2. Mix flax and water, set aside for 3 minutes.

  3. In a food processor add melted butter, sugar, vanilla, beans, maple syrup and flax eggs. Blend until very smooth and no clumps remain.

  5. Add bean mixture to dry ingredients and mix.

  6. Bake for 25 minutes, or until toothpick comes out clean. Allow to cool in the dish for 10-15 minutes before removing and transferring to cooling rack. Top with icing and additional sprinkles (if desired) once fully cooled.

  7. Slice into desired number of servings and store in airtight container in the fridge.

  8. Classic Vanilla Icing - In a mixing bowl, whisk all ingredients together. Use immediately to avoid icing becoming stiff.
