"I really love just about any dessert made with pumpkin. These easy pumpkin cheesecake bars are full of pumpkin flavor, too, and they're a nice alternative to classic pumpkin pie for Thanksgiving! I like to call them no bake pumpkin pie cheesecake bars. This is a great make-ahead dessert and perfect for when you're not in the mood to bake. They're really simple to make, even for a beginner!
