One of my dad's favorite things are cashews, so of course he went wild for these Amazing Cashew Cookies I baked him for his birthday. If you're a fan of cashews you'll want to make this quick and easy cookie recipe.

Ingredients

1 1/3 cup unsalted coarsely chopped cashews
2 cups unbleached white flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup plus 2 tablespoons of light brown sugar
1/2 cup unsalted butter
1 egg
1 teaspoon vanilla
1/2 cup sour cream

Instructions

Preheat oven to 350 degrees.
Soften butter. Mix flour, baking powder and soda, salt, and cashews.
Cream butter and sugar; beat in eggs and vanilla. Mix in sour cream. Add flour mixture.
Drop dough by teaspoons onto greased cookie sheets.
Bake at 350 degrees for 10-15 minutes until golden brown.
