Too Easy Chicken Salad

If you want easy, then you've come to the right place. This chicken salad recipe goes together so quickly. Serves2 (1/2 cup each)

Ingredients

  • 3 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • pinch Ground black pepper
  • 1/4 cup chopped celery
  • 1 tablespoon finely chopped onion
  • 1 can (4.5-ounces) Swanson Premium White Chunk Chicken Breast in Water, drained
  • Mixed salad greens or lettuce

Instructions

  1. Stir the mayonnaise, lemon juice, pepper, celery, onion and chicken in a small bowl.

  2. Serve on salad greens.

If you don't have any precooked chicken on hand but you want a no - fuss way to cook fresh chicken for this, this is what I do. Cut 2 chicken breasts into 1" slices. Sprinkle the slices on both sides with a little salt, garlic powder, and pepper. Place them on a rimmed baking sheet covered in foil, top with more foil and bake at 400 degrees for 30 minutes. They steam in their own juices and are tender enough to flake apart very easily! Plus no extra pot or pan to clean!

I love that you can use a can of chicken with this dish, but I think that once in a while a fresh chicken breast would add a nice change to it too. I love the fresh celery because it adds nutrition and texture. We have always enjoyed our chicken salad on buns, but I really want to give the lettuce a try and see what it tastes like. Thanks for posting a great idea!

The celery gives this chicken salad a nice crunch. It tastes very good in a lettuce wrap. I don't buy canned chicken so I just cooked up some chicken I had in the freezer. I like the flavor of the dark meat better. The white meat from the breast was a little dry.

I made this the other day with a rotisserie chicken I had left over. This recipe is so good. I did add just a little salt, and we don't care too much for lemon juice, so I added mustard. This is a great, easy recipe, just like it states. I will definitely be making this again.

Recipe sounds like it could use the addition of some seasoning. I also add chopped hard cooked eggs.
