Easy One Pot Chicken Cacciatore

I'm always looking for really awesome and easy one pot recipes; well I just found another one and it makes a perfect weeknight meal! This Easy One Pot Chicken Cacciatore is super simple to prepare and tastes amazing. So make sure you add it to your list of best one pot recipes!

Ingredients

  • 1 cut up chicken or 4 chicken breast halves
  • 3 tablespoons olive oil (can be reduced if you're fat watching)
  • 1/2 cup onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 3/4 cup tomatoes, chopped
  • 2 (8-ounce) cans tomato sauce
  • 1/2 cup red wine (like Chianti)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 1/2 teaspoon thyme
  • 1/2 teaspoon garlic powder

Instructions

  1. Add oil to pot and saute chicken until golden.
     
  2. Add onion and red pepper. Saute until veggies are soft, but not browned.
     
  3. Add tomatoes, tomato sauce, wine and seasonings and mix together.
     
  4. Simmer uncovered for 1 to 1.5 hours. Remove bay leaves before serving.
     
  5. Serve with spaghetti noodles or other pasta of choice.

I have rarely used chicken and spaghetti together, but this dish sounds so delicious that I am going to start doing just that. I like that this idea uses wine to give the chicken a rich flavor profile. Gonna have to make a new grocery list out for the weekend.

I have made this complaint before, which is: a viable substitute is usually not given for cooks who, like myself, do not buy alcoholic beverages, even for cooking.

There are quite a few viable alcohol substitutes that professional chefs recommend. For red wine, you can try substituting chicken, beef, or vegetable stock, or even grape, pomegranate, or cranberry juice.
