"40 cloves of garlic! Yes, you read that right! This is a French classic recipe, a roasted chicken with 40 cloves of garlic. Seems like a lot of garlic, but believe me, this is so AMAZINGLY delicious. The classic version of this awesome recipe is truly simple, only a few ingredients, as you can imagine, the garlic builds the flavour in this recipe. The original recipe is usually done with a whole chicken and cognac. There are a few variations out there but I did my own version."

Ingredients

  • 1 tablespoon olive oil
  • 8 chicken thighs (skin on and bone in)
  • 40 cloves of garlic (peeled)
  • 1 cup white wine
  • Juice of one lemon
  • Salt and Pepper
  1. Pat dry the chicken with paper towels.

  2. Generously salt and pepper both sides.

  3. In a dutch oven heat up 1tbsp of olive oil.

  4. Brown the chicken on both sides (skin side down first) for about 5 minutes on each side (you can do this in batches if the chicken doesn’t fit in all at once).

  5. Reserve the chicken on a plate.

  6. Remove all fat except 1 tbsp.

I cannot say enough good things about this Chicken with 40 Cloves of Garlic recipe. The sweet flavor of the roasted garlic permeates the chicken to perfection. The ingredients are so basic, and the preparation is so simple, it is hard to believe how wonderful the result is. I served it with mashed potatoes to soak up all the flavors. I also took the authors suggestion and spread some of the roasted garlic on crispy Italian bread...it was absolutely terrific.

To the inexperienced cook, this amount of garlic may be quite intimidating. But if you have ever used roasted garlic in your cooking, you know that it develops a very sweet flavor. That sharp acrid bite that the raw garlic has simply melts away. I would love this chicken dish over some mashed potatoes, or even pasta to soak up all that sweet garlicky goodness!

This recipe speaks for itself. IT IS AWESOME! SO flavorful and tasty! Honestly, the garlic is not overpowering, which always surprises me because of the 40 cloves. I like mine plated with plain brown rice so I can mix it in the sauce from the chicken. Enjoy!!!
