    Easy Breezy Hawaiian Chicken

    Take a vacation from your usual chicken dinners with this Easy Breezy Hawaiian Chicken. Pineapple baked chicken recipes are a great way to mix up your menu with a little something sweet. Your family will love it, and so will you!

    Ingredients

    • 4 boneless, skinless chicken breast halves
    • 1 large can pineapple slices
    • 1 cup white granulated sugar
    • 2 tablespoons corn starch
    • 3/4 cup white vinegar
    • 1 tablespoon soy sauce
    • 1/4 teaspoon ground ginger
    • 1 chicken bouillon cube (or the equivalent in granules)
    • 1 green bell pepper, cut into strips

    Instructions

    1. Pre-heat oven to 350 degrees F.
       
    2. Coat the chicken in a flour, salt, and pepper mixture. Brown well on all sides in vegetable oil. Drain on paper towels.
       
    3. Drain the pineapple, saving the juice. Pour the juice into a measuring cup and add water to make 1 1/2 cups of liquid.
       
    4. Combine the juice, sugar, corn starch, vinegar, soy sauce, ginger, and bouillon in a saucepan. Bring to a boil, stirring constantly. Boil 2 minutes.
       
    5. Place the chicken in a glass baking dish and pour the sauce over the chicken. Bake uncovered 1 hour.
       
    6. After 1 hour, top with the pineapple and green pepper strips. Bake 30 minutes more. Serve with rice.
