Southwestern Sausage Supper

Ingredients
  • 1 pound sausage
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 1 pkg (8 1/2 oz) corn muffin mix prepared according to directions
  • 8 ounces canned tomato sauce
  • 1 pkg taco seasoning mix
  • 1 cup whole kernel corn
  • 2 tbsp water
  • 2 jalapeno peppers, chopped
  • 15 ounces canned black beans, drained
  • sour cream
  • green onions, thinly sliced
Instructions

Preheat oven to 350. Brown and crumble sausage in large skillet. Add onions and cook until transparent. Stir in tomato sauce, water and all but 1 teaspoon of the taco seasoning. Simmer to blend. Remove from heat and add black beans. Pour mixture into greased 9x13 glass baking dish. Sprinkle with 3/4 cup shredded cheese. Prepare corn muffin mix according to package. Combine corn and jalapenos with mix and spread over top of sausage mixture. Sprinkle with 1/4 cup cheese and 1 teaspoon taco seasoning. Bake 30 minutes until lightly browned and cornbread is set. Cut into squares. Garnish with sour cream and green onions. Serves 8. Refrigerate leftovers.
