One Pot Sausage and Rice Skillet

Get a taste of life on the ranch with this One Pot Sausage and Rice Skillet. Cast iron skillet recipes like this are great campfire meals, since they're easy and quick to make. Easy one pot dinners make cooking dinner fun and fast!

Ingredients
  • 1/2 pound smoked sausage
  • 1 cup rice, uncooked
  • 1 can (about 14 ounces) diced tomatoes
  • 1 cup water
  • 1 can ranch-style beans, drained
  • picante sauce to taste
Instructions
  1. Cut sausage in half lengthwise; cut crosswise into 1/4-inch slices.
     
  2. In a 10-inch skillet, combine rice and sausage; saute. Add tomatoes, beans, and picante sauce and mix well, breaking up tomatoes with a spoon.
     
  3. Add water and bring to a boil.  Reduce heat, cover, and simmer 20 minutes.
     
  4. Remove from heat and let stand covered for 5 minutes.
     
  5. Top, if desired, with sliced avocado, sour cream, and chopped fresh cilantro.
