Beefy Green Chile and Cheese Bake

This loaded casserole recipe has it all. Meaty, cheesy and packed to the brim with zesty ingredients, it will feed any hungry family. Easy to prepare and easy to enjoy, Beefy Green Chile and Cheese Bake is a must.

Ingredients

  • 2 cups crushed tortilla chips
  • 2 tablespoons water
  • 1 large egg, slightly beaten
  • 1 pound ground beef, cooked and drained
  • 1 envelope dry onion soup mix
  • 1 can (4-ounces) Ortega diced green chiles
  • 1/2 cup Cheddar cheese, shredded and divided
  • 1/2 cup Monterey Jack cheese, shredded and divided
  • 1 1/2 cup Ortega salsa - homestyle recipe (medium)
  • 1/2 cup green bell pepper, diced

Instructions

  1. Preheat oven to 350 degrees F. Grease 9-inch square baking dish.
     
  2. Combine chips, water and egg in small bowl. Press into prepared baking dish; bake for 10 minutes.
     
  3. Combine beef, soup mix, chiles, ¼ cup cheddar cheese and ¼ cup Monterey Jack cheese in medium bowl. Spread over tortilla crust.
     
  4. Top with salsa, bell pepper, remaining cheddar cheese and remaining Monterey Jack cheese.
     
  5. Bake for 25 to 30 minutes or until cheese is melted.

To member 16164: Just read your request, maybe this is the dish you're seeking, butter-flavored cooking spray 1/2 lb lean ground beef 1 cup onion, chopped 1 (10 3/4 ounce) can condensed cream of tomato soup (original version called for low fat or low sodium, I use regular) 1 (8 ounce) can tomato sauce 1 1/2 cups water 2/3 cup instant rice, uncooked 1 (15 ounce) can cut green beans, rinsed & drained 2 teaspoons dried parsley flakes 1/8 teaspoon ground black pepper Directions: 1Spray a large saucepan with cooking spray.2Brown beef and chopped onions over medium heat until cooked though; drain any fat.3To the browned meat and onions, add the cream of tomato soup, tomato sauce, and water.4Bring to a boil.5Add uncooked instant rice, green beans, parsley, and black pepper; stir well.6Cover and reduce heat to low.7Simmer for 15 minutes or until rice is tender, stirring once or twice

Great recipe, except for dry onion soup(to high in sodium) mix and the green bell pepper. I used a real onion saute with the beef, a low sodium taco mix and a mild green chile pepper and green onions for the top

I Loved it and so did my boyfriend!! Fixed it for dinner tonite. Next time I will try chucky salsa great recipe

I love this dish!! I have been making it for years. I hope someone can help me find a lost receipt. It had a pound of raw ground beef, minute rice, a can iv green beans I think. An onion and maybe some kind of soup? ...............thank you, Nancy
