Chocolate Mint Fudge

Ingredients
  • 12 ounces bittersweet chocolate, chopped
  • 3 ounces unsweetened chocolate, chopped
  • 1/2 cup marshmallow creme
  • 3 cups sugar
  • 1 1/2 tsps peppermint extract (be generous)
  • 2/3 cup water
  • 1 can sweetened condensed milk
  • 2/3 cup whipping cream
  • 1/2 cup unsalted butter
Instructions

Line a 9 inch pan with foil or butter one of those cheap aluminum pans. Place chocolates, marshmallow and peppermint in bowl. Mix sugar, milk, water, cream and butter in a heavy saucepan. Stir over medium-low heat until sugar dissolves. Increase heat to high and bring to a full rolling boil. Reduce heat to medium-high and stir slowly until candy thermometer reaches 235 F. Pour boiling mixture over ingredients in bowl. Stir vigorously with spoon until chocolate melts and fudge thickens slightly, about 2 minutes. Immediately pour fudge into prepared pan, smooth top and chill until firm.
