One taste of this pineapple icebox cake and you simply won't believe how easy it was to make! Pineapple Mansion Cake is a heavenly layered dessert recipe with Cool Whip, vanilla pudding, crushed pineapple, graham crackers and more. This stack of creamy deliciousness takes mere minutes to assemble, so it's a perfect last-minute no bake dessert recipe. Simply whip together the filling, pipe it between layers of graham crackers, and refrigerate. Top with nuts and maraschino cherries if desired. This no bake cake is also very versatile! Simply swap out the crushed pineapple for your favorite flavor of pie filling and experiment with different flavors of pudding mix - the flavor combinations are endless. Just make sure the pie filling is chopped small enough to fit through the hole in your bag when piping it onto the graham cracker layers.

Ingredients

  • 1 (16-ounce) carton Cool Whip, thawed
  • 1 cup sour cream
  • 1 package (3.4-ounce) instant vanilla pudding mix
  • 1 (8-ounce) can crushed pineapple, drained
  • 24 whole graham crackers
  • walnuts and maraschino cherries for garnish, if desired

Instructions

  1. In a large bowl, mix Cool Whip, sour cream, and pudding mix until well blended. Fold in pineapple. Spoon into a zip-top bag and cut off the corner of the bag for piping.

  2. On a large serving plate or dish, arrange 4 graham crackers in a rectangle. Pipe about 1 cup of the pudding mixture onto the crackers and top with 4 more crackers. Repeat layers five times. Cover and refrigerate at least 8 hours or overnight.

  3. Remove from refrigerator and let sit for about 15 minutes to soften. Garnish with nuts and cherries, if desired.

I've only made one ice box cake before and that was the chocolate thin wafer cookie one. It came out great but I had wished the chocolate wafers tasted more like an Oreo! I love anything with graham cracker in it and this together with the pineapple and nuts makes me want to make it tonight. I have to say that the sour cream really surprised me. I would have thought cream cheese instead. Thanks for a great looking recipe. Can't wait to try this one out.

I've never tried to make an icebox cake before, but this one looks so yummy I will have to try it! I love anything with graham crackers and this looks amazing! It's great to have some dessert options for warmer weather that don't require you to turn on your oven! I'm guessing you could make alot of different variations on this cake too other than pineapple. I'm definitely giving this one a try!
