I've never made a poke cake before. I especially like it when things are easy the first time round! This cake sure looks like a winner. I really like a lemony pudding at the end of a meal as I don't really have a sweet tooth. I'm definitely giving this one a try.

I am a chocoholic but my second most favorite flavor is lemon and this Lemon Pudding Poke Cake is absolutely heavenly!! Not being a great baker I approach cake recipes with suspicion but this one is simple and easy to follow and surprisingly quick to make too which is lucky because the cake disappeared so quickly that it seems I will have to bake another one, lol!

Poke cakes are so trendy now and it makes sense because they are so simple and delicious, especially for the home baker! Lemon cake mix and lemon pudding go great with the creamy cool whip. Some other nice flavors to try are pumpkin, spiced, and chocolate or vanilla with fruit.

This is great made with lemon cake mix too. I don't add any topping besides the lemon pudding (cooked variety). Saves some calories and tastes great
