Ingredients

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/4 cup white sugar
  • 1 teaspoon ground cinnamon (you can add more depending on your liking)
  • 1/2 teaspoon salt
  • 1 teaspoon natural vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 4 cups apples, peeled, cored and diced

Instructions

  1. Preheat oven to 350 degrees F (175C).
     
  2. In a mixing bowl beat oil and eggs until creamy. Add sugar, vanilla and baking powder, continue to beat together well.
     
  3. Combine flour, salt, ground cinnamon and apples together in a bowl.
     
  4. Mix well dry and wet ingredients. The batter will be very thick.
     
  5. Spread batter into the 9x13 inch cake pan that have been covered with parchment paper.
     
  6. Bake for 45-50 minutes or until toothpick inserted into the center comes out dry. Let the cake cool on a wire rack.
     
  7. Once the cake is cool, remove the crust from edges, cut the cake to squares and dust with confectioners sugar on top.

I grated the apples coarsely; the bars were very dense and moist. That's OK with me, though. I was not real impressed with the flavor. I think I will add 2 tsp. or more cinnamon, and maybe use some brown sugar next time. I used my home-grown Regent apples, that are very juicy and tasty.

I found watching this video to be very informative. The speaker was easy to understand as for as directions. I appreciated her humor and detail.

Husband and I both reallyliked this recipe - my only comment would be to make sure your apples are cut into small pieces - really easy to put together and get in the oven if you are in a hurry... did not peel the apples...
