Skillet Beef & Vegetables

In this budget friendly recipe extra lean ground beef, fat free gravy and lots of mixed veggies are combined with pasta to make this hearty skillet dish. Ground beef recipes are sometimes exactly what the doctor ordered.

Ingredients

  • 3/4 pound extra-lean ground beef
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder or 2 cloves of garlic, minced
  • 1 can (10.75-ounces) Campbell's Fat Free Beef Gravy
  • 1 teaspoon dried basil leaves, crushed
  • 1 (9-ounces) package of frozen mixed vegetables
  • 1 1/2 cup rotini pasta, cooked according to package instructions

Instructions

  1. Cook the beef, onion, basil and garlic powder in a 10-inch skillet over medium-high heat, until the beef is well browned, stirring often to separate meat. Pour off any fat.

  2. Stir the gravy and vegetables in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the vegetables are tender-crisp.

  3. Stir in the Rotini and cook until the beef mixture is hot and bubbling.

Yummy! This recipe reminds me of a fancy and more hearty Hamburger Helper. I really like the idea that you can customize how much and what kind of vegetables go into the skillet meal. I bet that this would be equally good if you swapped the beef gravy for chicken gravy and the ground beef for ground turkey or chicken. It would change the dish up a bit. I beth that the leftovers would freeze well for a quick weeknight re-heat.

I have been looking for a recipe like this for a long time. It has everything you can want to make a complete meal. I like that the ingredients are simple and easy enough to find no matter where you stop at the store to shop for groceries or catch what is on sale.

You should be able to freeze the leftovers.
