Pineapple Side Dish Casserole

Try this refreshing tropical casserole as a side dish with ham, roast pork or turkey. It's a unique dish that combines sweet and savory flavors and is a great alternative to bland mashed potatoes or pasta.

Notes

I think I actually use a larger dish than a 1 quart casserole but I'm not sure of the capacity. Also, I have made this casserole substituting 2 1/2 cups of thick applesauce, unsweetened, for the pineapple. If you try this, add 1/2 tsp. ground cinnamon to the applesauce.

Ingredients

  • 1/4 pound butter, melted
  • 1/2 cup sugar
  • 1 tablespoon flour
  • Salt
  • 2 eggs, beaten
  • 20 ounces can crushed pineapple and juice
  • 5 slices broken bread

Instructions

  1. Preheat oven to 325F degrees.
     
  2. Mix all ingredients except the bread.
     
  3. Then add the bread.
     
  4. Bake in a 1 quart casserole for 45 minutes or until golden brown.

Oh gosh this casserole sounds good! I really love pineapple, especially served along with a ham roast. I think that this is going to be a new family favourite in my household. I kind of like the idea of a slightly sweet side dish, especiallyl at holiday meal time. I think that this will be a nice switch-up from my usual ambrosia salad. I also like the hint that says you can switch from pineapples to apple sauce. It would give the dish a completly differrent flavour profile. I can't wait to try this dish out.

This recipe was truly amazing. i bought some to work for friends it was the rave. The next time i make it i am going to make it my own. Although i didnt use a whole stick of butter i used 4 teaspoons and it still came out wonderful.. All my friends and co workers are on this site getting recipes.. they are easy to follow and read... i am really happy. i love doing things different with my food..
