Yum! I've made more than my share of hash brown casseroles, and I want to give this a try. I think I'd add some chopped green or red pepper to the onion, and I like using the Jimmy Dean sage sausage for dishes like this. Provel is virtually unknown around here so provolone is the way to go. I'm only aware of provel from attending conferences in St. Louis. Sliced mozzarella would also work well for this. Thanks for contributing this.

This Tater Tot Egg Casserole is a hit among kids because it contains their favorite, tater tots. Very easy to make, mommy does not have to make the potato ingredient from scratch. Perfect not only for breakfast but also for lunch or dinner.

I like that you could use this dish for literally anything. Like Saphy98 said, it would even be a good dish for company. I have three hungry teenagers, so this breakfast would definitely fill them up on a busy morning when they need plenty of fuel to get through finals or something just as tough.

This Tater Tot casserole is one to try. Easy and it would be good for company breakfast. I am going to make this this weekend and I am sharing it on FB. I love breakfast casseroles and this one looks easy and yummy. I would probably use the provolone cheese over the provel.
