    Supreme Breakfast Casserole is a breakfast casserole recipe jam-packed with everything you might like to eat for breakfast. It's a satisfying mix of eggs, vegetables, breakfast meat and potatoes all rolled into one hearty meal.

    Ingredients

    • 1/2 stick margarine
    • 1 small sweet onion, chopped
    • 1 small green pepper, chopped
    • 2-3 medium tomatoes, chopped
    • 1 24-ounce bag frozen hash brown potatoes
    • 12 eggs, beaten
    • 1/2 to 1 pound cubed ham, thin sliced ham, crumbled bacon or sausage (all meat should be cooked before going in the casserole)
    • 3 cups Cheddar cheese, shredded

    Instructions

    1. Melt margarine and place in bottom of 9 x 13-inch baking pan.
       
    2. Spread potatoes (still frozen is okay) in bottom of pan.
       
    3. Sprinkle chopped vegetables over potatoes.
       
    4. Add salt and pepper to taste.
       
    5. Sprinkle meat over potatoes and vegetables.
       
    6. Pour beaten eggs over potatoes.
       
    7. Bake at 350 degrees F for 45 minutes.
       
    8. Remove from oven and sprinkle cheese evenly over top.
       
    9. Bake another 5-10 minutes or until cheese is hot and bubbly.
       
    10. Remove from oven and let set for approximately 5 minutes.
       
    11. Cut into 2 1/2 - 3-inch squares and serve with spatula.

    Instructions incomplete...should you cook sausage/meat before putting in casserole?
