    Simply Sweet and Sour Meatballs

    You can retire your oven for this simple meatball recipe. The only appliances you need to make this home-cooked favorite is a stove-top and a microwave. There is no oven required with this delicious meatball recipe.

    Ingredients

    • 1 green pepper, thinly sliced
    • 2 (8-ounce) cans pinapple chunks, drained, juice reserved
    • 3/4 cup brown sugar, packed
    • 1/4 cup cornstarch
    • 3/4 cup cider vinegar
    • 1/4 cup soy sauce
    • 1 pound ground beef, crumbled
    • 1/4 cup dry bread crumbs
    • 1 egg, large
    • 1 tablespoon soy sauce

    Instructions

    1. Combine ground beef,  and shape mixture into 20 meatballs.
       
    2. Cook in a skillet, over medium heat until browned and cooked through; set aside.
       
    3. In a 2-cup measure, combine reserved pineapple juice with enough water to equal 1 1/3 cup, set aside.
       
    4. In a 2-quart casserole, combine the brown sugar, vinegar, cornstarch and soy sauce, then blend in the pineapple juice mixture.
       
    5. Microwave at high for 7 to 15 minutes, or until the mixture is clear and thickened, stirring 3 or 4 times during cooking, set aside.
       
    6. Add meatballs, green pepper slices and pineapple chunks to the sauce.
       
    7. Microwave at high for 4 to 6 minutes, or until mixture is hot, stirring once or twice during cooking time.

    Can I come to your house for dinner? I need these sweet and sour meatballs. I love anything sweet and sour, and lately it has been chicken or pork with my sweet and sour sauces. I want beef particularly meatballs. I want sweet and sour, and I want it now.
