Ingredients

  • 1 pound ground beef
  • 3 cloves garlic, chopped
  • 2 packets Swanson® Flavor Boost Concentrated Beef Broth
  • 4 flour tortillas (8-inch), warmed
  • 4 romaine lettuce leaves
  • 4 tomato slices, cut in half
  • 4 red onion slices, cut in half

Instructions

  1. Cook the beef and garlic in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

  2. Stir the concentrated broth in the skillet and cook until the mixture is hot and bubbling.

  3. Place 1 leaf lettuce onto each tortilla. Spoon about 1/2 cup beef mixture down the center of each tortilla. Top each with 2 half slices tomato and 2 half slices onion. Wrap the tortillas around the filling.

The beef broth and the red onion sure make this dish flavorful, don't they? I love a good Mexican dish for Taco Tuesday. I think this one will be on the schedule for next week. I want to see if adding taco seasoning to the meat brings this dish closer to my burrito recipe without being the same.

This is a basic recipe for burritos. For a healthier version, I would use lean ground beef or ground turkey, and low sodium beef broth. Instead of the red onion slices, I would use slices of avocado. Reduced fat cheddar cheese, and salsa would also be delicious in the burritos.
