Hawaiian Meatballs

You'll want to break out the coconut milk and the Ukulele when you bite into these Hawaiian meatballs. How to make meatballs has never gotten more creative with this island version of a classic recipe.

Ingredients
  • 1 (4-ounce) can crushed pineapple
  • 1 pound ground beef
  • 1 egg
  • 2 bread slices, crumbled
  • 1 tablespoon onion
  • 1 teaspoon salt
  • 1/8 teaspoon cloves
  • 1/8 teaspoon allspice
  • 2 tablespoons pineapple syrup/juice
  • 1/3 cup syrup/juice
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
Instructions
  1. Drain pineapple, reserving juice.
     
  2. Combine pineapple, beef, egg, bread, onion, salt, cloves, allspice, and 2 tablespoons of pineapple juice.
     
  3. Form into little balls and fry in a skillet until browned; drain grease.
     
  4. For sauce, combine 1/3 cup pineapple juice, ketchup and brown sugar. Cook the sauce a few minutes over medium heat, then pour over meatballs and cook over medium heat until done. 
     
  5. Keep warm in a chafing dish.
