Marinated Carrots

Try these marinated carrots for a healthful side dish perfect for any meal. They are quick and easy to make and kids will love them. You can even use the marinade for up to three batches of carrots.

Ingredients

  • 1 pound carrots
  • 1/3 cup vinegar
  • 1/3 cup olive oil
  • 3 cloves garlic, chopped
  • Salt

Instructions

1. Peel carrots and slice into typical carrot-stick-sized pieces.

2. Choose an empty jar large enough to hold the carrot sticks standing up. Fill it with vinegar and olive oil. Shake some salt in and add garlic.

3. Put the carrots in, seal the jar cover tightly, and shake. Refrigerate for three hours, occasionally shaking the jar and turning it upside-down.

4. At the end of the approximately 3 hours, remove carrots with tongs, getting off most of the oil and garlic.

I have been looking for a different carrot recipe to offer my kids besides my glazed carrots that are filled with brown sugar and butter. I love that this recipe has vinegar to give it some kick and let it be different from plain old carrots. Thanks for the idea!
