I used a Mexican spice blend while making the balls and then served them with a jarred salsa, but you could use an Italian spice blend and dip them in warmed pizza sauce, or simply use your favorite prepared condiment.

Ingredients

  • 1 (6-ounce) package mac and cheese plus ingredients called for on the package
  • 2 tablespoons vegetable oil, divided
  • 1 cup bread crumbs
  • 2 tablespoons grated Parmesan
  • 2 tablespoons dry parsley flakes
  • 1/2 teaspoon cayenne pepper, pepper flakes or a seasoned dry herb mix you prefer (see note)
  • 1/2 cup all purpose flour
  • 2 beaten eggs

Instructions

  1. Make the mac and cheese per directions on the box, adding teaspoon cayenne pepper to the mix (if desired). Remove from the cooking pan and store in a 1 quart storage container in the refrigerator at least 8 hours to become very firm - it must be very well chilled before continuing.

  2. When ready to bake, reheat oven to 425 degrees F. Line a baking sheet with foil and rub with at least 1 Tablespoon of the vegetable oil - reserve the rest of the oil.

  3. Place bread crumbs, Parmesan cheese, and dry herbs into a shallow bowl. Place flour into another bowl, and the eggs into a third bowl.

  4. Use a small ice cream scoop or a tablespoon measure to scoop balls of the mac and cheese, one by one forming them in your hands which have been rubbed with the remaining oil. Drop each ball into the flour, then into the egg, then into the bread crumbs, rolling in your oiled hands and then place them an inch apart on the prepared bake pan. Continue until all of the mac and cheese are used you should have about 20 small balls.

  5. Bake for 10 minutes. Check them and continue 7 10 minutes until balls are lightly browned be sure they do not burn on the bottom.

  6. Serve immediately as is or with a dip of your choice.

It is such a lovely surprise to bit into one of these and discover the Mac and Cheese inside, lol! The parmesan and herb coating is a delicious addition to the overall flavor. We added some garlic powder but I think it would be just a good without it. It is a great snack for the whole family.

Omg I want this right now. Back when I was a kid my grandmother made macaroni and cheese and my favorite part was always the edges that had a little extra love and crunch to it. Now I can make these and have that in every single bite! Oh my gosh these can probably even be made up and frozen for whenever you want a cheesy snack...just bake what you need and Yum!

I'm really intrigued by this recipe. I love macaroni and cheese, and I'd love to give this snack version a try. On one of Guy Fieri's shows, he showcased a burger restaurant that had buns made of mac and cheese on the menu. It's more of a knife and fork item rather than handheld, but the idea was fascinating. This looks like it would be easy to make, provided the mac and cheese are thoroughly chilled, probably overnight at least.

These look easy enough to try and my kids love anything with mac and cheese even grilled cheese mac and cheese! I am also wondering about the texture and how crunchy these become on the outside. Has anyone tried dropping these into a deep fryer? I'm thinking that having them in the fryer basket might keep them together better.
