Cowboy Caviar

"Cowboy caviar, sometimes known as Texas caviar, is a salad or dip made with corn and black beans. My version has avocados, cilantro and red peppers in it and is drizzled with a delicious "dressing" that includes lime juice, garlic and olive oil. You can serve this as a side dish. Or serve it my favorite way - as a dip with tortilla chips. The way the flavors come together is absolutely delightful. Try it for your next gathering."
