I just can't get enough of those little rainbow peppers! Their colors and small size are always a big hit with the kids and party guests alike. They are so versatile - the different combinations of "stuffings" are endless! Sometimes I like to take cooked crumbled Italian sausage, mix it with a little store - bought marinara, and put it in the peppers. Then I top each with some sliced mozzarella or provolone, (shreds can get all over the place) and bake until golden and bubbly!
