Chicken Goulash on Sour Cream Crust

This delicious, easy goulash recipe combines the hearty goodness of traditional goulash sauce with lean chicken and a flaky, tangy crust. Chicken Goulash on Sour Cream Crust will fill your kitchen with the flavorful aromas of paprika and red wine.

Ingredients

  • 2 tablespoons olive oil
  • 2 large red onions
  • 1 pound boneless skinless chicken, diced
  • 1 1/2 tablespoon paprika
  • 2 tablespoons seasoned flour
  • 1 tablespoon tomato sauce
  • 1/2 cup red wine
  • 1/2 cup chicken stock
  • 3 tablespoons plain yogurt
  • 1/2 cup butter, softened
  • 1 1/3 cup sour cream
  • 1 egg
  • 3/4 self-rising flour, sifted
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Lightly saute the onions in a little of the oil until golden.
     
  3. Meanwhile, place the flour and paprika in a mixing bowl, and add the chicken to coat.
     
  4. Remove the onions from the pan, add the rest of the olive oil, and saute the chicken for 2 - 3 minutes.
     
  5. Return the onions to the pan, add tomato paste, wine and stock.
     
  6. Bring to a boil and simmer 6 - 7 minutes. Remove from heat and stir in the yogurt.
     
  7. Place the butter, sour cream and egg in a bowl and mix to combine. Stir in the flour and parsley to form a soft dough.
     
  8. Press the dough into a lightly greased casserole dish or flan dish, working it well up the sides to a thickness of 1/2 inch.
     
  9. Spoon in the filling, cover and bake at 350 degrees F for 35 minutes. Uncover and bake a further 10 - 12 minutes or until golden and crusty.

While this sounds delicious, my household are not wine drinkers, so we would have to buy a whole bottle just for this recipe, and then most likely the rest would go to waste before we could finish it or make the recipe again. I will have to look to see what smaller quantities of wine are available.

Are you sure it's 1 1/2 Quarts of Paprica? It seems like way too much:but the recipe sounds delicious.
