3 Bean Salad

This peppery salad shows that beans don't have to be boring. 3 Bean Salad makes a great side dish or light meal.

Ingredients

  • 1 can green beans
  • 1 can yellow wax beans
  • 1 can red kidney beans
  • 1 cup chopped celery
  • 1 green pepper, chopped finely
  • 1 onion, chopped finely

Instructions

  1. Mix the chopped vegetables and let them stand overnight in 3/4 cup sugar in the refrigerator.
     
  2. Dressing: 1 teaspoon salt, 1/2 teaspoon coarse blk pepper, 1/3 cups vegetable oil, 2/3 cup vinegar.
     
  3. Add to vegetables.
     
  4. This can be varied by the type of vinegar that you use, herbed or wine vinegars are nice.
     
  5. You can also substitute garlic salt for plain salt or just add chopped garlic.

This bean salad recipe looks simple to make and very tasty! I'm going to try t his recipe for an upcoming potluck BBQ i will be attending soon. This kind of salad is great because it is tasty and filling and a great alternative for vegetarians. This recipe is also dairy and gluten free so everyone can enjoy it! I usually add chickpeas and a few other types of beans to make it even heartier! I'm wondering what the purpose of soaking the beans is sugar is?

Would Like Recipes that are gluten and wheat free.

When do you add the 3 cans of beans, do you drain them before? Step # 2 , #4 & # 5 does not appear in the list of ingredients.

Do you drain the vegetables? In step #5 there isn't any salt in the above recipe, how much is added? Are the green beans, wax beans and kidney beans chopped as stated in step #1
