Watermelon Rind Preserves

Ingredients
  • 1 1/2 pounds watermelon rind
  • 3 cups sugar
  • 1 tbs lemon juice
  • 1 tbs cardomon seed
Instructions

Peel green skin. Remove pink flesh. Get 4 cups rind and cut into 3/4 inch cubes. Cover with cold water. Boil, simmer for 1 hour, until tender. Drain. Dissolve sugar in 2 cups water in same pan over medium heat. Add lemon juice and boil. Add rind, boil 15 minutes. Skim if necessary. Crush cardomon seed, add to mixture and remove from heat. Cover, leave overnight. Remove cover, boil for 15-20 minutes over med heat. Syrup should be thick. Pour into jars.
